More Raw Pasta! Noodles and marinara....Raw Spaghetti :)

This marinara is so appetizing! OMG it hit the spot, when you don't want a salad and don't have time to make something raw and dehydrated....

Noodles:
using a potatoe peeler, peel the skin off a zucchini.  peel off "noodles" of zucchini down to the seeds and discard the zucchini (or give it to the chickens, they love it)

Marinara:
2 tomatoes
5-6 sun dried tomatoes
1/2 red bell pepper (I omitted because I didn't have one and it still was rawmazing)
2 t ovoo
1 T fresh basil...(I used a lot more)
1 t dried oregano
salt
pepper to taste

process on high until creamy and pour over noodles.

Parmesan:1/2 c pumpkin seeds
1/2 t salt

process seeds into flour like consistency and add salt....sprinkle over marinara and noodles!

Raw Lemon Bars

If you were missing Lemon Bars....well, you don't have to miss them anymore, even a friend that doesn't necessarily like raw food ate 2 of these and he thought they were great!! And they are great!

Cookie:
2 c shredded coconut
1 c cashews
zest of 2 lemons
1/4 c maple syrup or honey

press into a square on a piece of wax paper, press and press until its firm and put in freezer. After about 1 hour score the bars into individual servings.

Frosting:
juice of 1 lemon
zest of 2 lemons
1/2 c coconut oil
1/3 c honey/maple syrup/or agave

mix together and pour on put in freezer for 15 mins, when frosting is thick pour on top of the bars and store in freezer. Enjoy!

Creamy Peppercorn Ranch Dressing

This dressing has a zing! The greatest part about it is that it can be a base to add all kinds of things to such as sun dried tomatoes and chipotle.....use as a dip or a spread on a raw bread or tortilla.

1/3 c water
1/3 lemon juice
2/3 c raw hemp seed
5 cloves of garlic (seems like alot but it tastes great)
2 tsp peppercorns
1 tsp salt

blend ingredients until creamy in food processor or Vita mix.  Slowly add 1 c olive oil (ovoo) process on high until emulsified.....creamy and delicious.

Tea & Scones

One of my favorite things to drink is tea! And I have become quite the tea snob in my day thanks to a buddy of mine who gifts me Teavana tea!! Wow is it delicious!! Teavana is loose leaf tea and tastes amazing! There are so many wonderful flavors.  My favorites are the Chais and herbal blends like: Strawberry Lemonade, Tulsi Dosha Chai, Rooibos Peach, Cinnazen Tang, Sweet Fruit Garden, and many more.  If you love or even like tea and want to get away from coffee, Teavana has a website with all of their great teas! Their tea club is awesome, you get 3 teas a month for six months and it is $120....$20 a month...thats only a couple trips to Starbucks and a 3 pack Teavana club order is at least 120 cups of tea!!  On with the Scone recipe!

Cranberry Scones (and if you don't want cranberry, add a different fruit, like strawberries)

1 cup carrot
1 cup apple
1 c almonds
1/2 c brazil nuts
1/2 c pumpkin seeds
1 c raisens
1/2 c cranberries
1/2 c ground flaxseed
2 T honey
1/4 c lemon juice
2-3 tsp of ovoo
sesame seeds for sprinkling on top

process carrot in processor and put in a mixing bowl, process apples and add, process nuts & add, process raisens & add, then cranberries (unless you want big chunks of raisens and cranberries then don't process those at all, I wanted smaller chunks)
Mix wet ingredients - honey, lemon juice & oil
add wet to dry and add to mixing bowl
mix with your hands (and I added a couple shakes of stevia)
drop by heaping spoonfuls onto dehydrator
dehydrate for approx15 hours
YUM!
Now you can have your tea....and your scones too!

Raw Taco Special

Taco "meat"

1/2 c pistacios (or any nut you choose, I used pumpkin seeds)
1/2 c walnuts (again any nut you choose, I used almonds)
1 chopped carrot
1/2 c chopped onion
2 t Braggs
Taco spices (use a taco packet...check the ingredients first....Trader Joes has a great Taco Seasoning packet just 79 cents!)

Soak nuts
puls in processor
take out nuts, process carrots onions and braggs until finely chopped
toss ingredients together with spices

Choose your toppings & Tortilla
You can use the corn tortilla recipe for raw tortillas in your dehydrator or you could use a lettuce leaf a half of a bell pepper....a seaweed wrapper....etc.
Use toppings such as: corn, tomatoes, peppers, cucumber, jalapenos, salsa, avacado, sprouts....on and on!

Raw Lasagna

This recipe is from Raw Food A Complete Guide for Every Meal of the Day

5 mushrooms sliced
1 T ovoo
1/2 T Braggs
2 peeled zucchini
1/2 package spinace
6 Tb marinara sauce (2 tomatoes, 5-6 sundried tomatoes, 1/2 red bell pepper, 2 t ovoo, 1 T fresh basil, 1 t oregano, salt, garlic & cayenne to taste -Process all ingred)
1 or 2 avacados

marinate mushrooms
thinly slice zucchine with a potato peeler for noodles
put spinach in some water and process to get a sauce
slice avacados
layer!!
Eat

Psst....44 days and counting!

I just thought of this! I can't believe its been 44 days! It has been wonderful.  My buddie and I celebrated at a great Thai restaurant around 30 days... I had a Ginger Tofu Stir fry with rice....it was a great cooked meal!  I couldn't believe how yummy it was! I am all for a good stir fry now and again!  I really wanted to add some whole cooked foods to my raw eating...but so far the only cooked food I have eaten are an egg and some rice.  I just get so excited about raw...plus I don't want to fall off the wagon, and as good as cooked food is, there is always something raw to replace it....and thats all I need!  My husband has just about finished my garden and I will be ready to plant....I wonder how many vegis I can cram into a 20 X 20 garden?!

Broccoli Salad with Raisins

It's late, but I can't sleep.  Lucky me, its because my husband let me get in a great nap today....and then after dinner the whole family chipped in and helped clean the house! So my house is clean, the dishwasher is taking care of business and so is the washing machine! Wow! I get to sit here and blog recipes...a new favorite pastime!

1 lrg crown of broccoli cut into bite sized pieces
1 t salt
1 T ovoo
3 carrots grated
1 red onion diced
1 tomatoe chopped
5 sun dried tomatoes cut into small pieces
1 apple cubed
1/4 c raisins
1/4 c sunflower seeds
1 T lemon juice

coat broccoli with salt and oil to soften, add other ingredients, dress with lemon juice.
I plan to add some plain yogurt and stevia to the lemon juice...we shall see how it tastes!

Pasta!!! Pasta!!!

I started blogging mostly for myself because I wanted to save all these recipes I have been "uncooking".  And its always fun to share with family and friends who ask, because it has been a topic of discussion.  Sometimes I see different friends eyes roll when I start to talk about Raw food...oh well.  Here is the scoop, the more I read and study these books and experience this food journey....well, the more convinced I am that it is for me!  When you find that it your life, you want to share it! I feel better, more even/balanced, way less moodiness, and am in constant awe at the amazing food that has been provided for us!  I don't want to "sell" it to anyone....it sells itself! Once you feel how much energy you have! And I am not saying you need to go 100% raw...just try 50% and you'll see an amazing change! 

I have been posting lots of chocolate things and now I found these interesting recipes...both for Pasta!! Not made of gluey white flour that has been bleached for your pleasure, but made from vegis....yum!

Recipe from Raw Food A Complete Guide for Every Meal of the Day by Erica Palmcantz and Irmela Lilja

Zucchini Pasta with Marinated Mushrooms

1 zucchini peeled
4 slice mushrooms
5 cherry tomatoes
1/4 c sunflower sprouts

marinade:
1 T Braggs
1 T ovoo
2 sprigs of parsley finely chopped
1 T lemon juice

make marinade and put in sliced mushrooms (marinate up to 3 hours)
make thick strips of pasta zucchini using your potatoe peeler, keep doing it all the way to the seeds.
put pasta on a plate, top with mushrooms, tomatoes, & sprouts!

Pesto Pasta

1 zucchini
1 carrot
2 T Pesto (1/2 c pine nuts/or I have used pumpkin seeds, 1/2 c ovoo, 1 sprig of basil/I like to use more, 2 tsp salt, lemon juice to taste.  Process)
5 cherry tomatoes or other tomatoe chunks
5 Kalamata olives

use potatoe peeler and make thick pasta noodles out of zucchini and carrot
Toss pasta with pesto
add tomatoes and olives
Enjoy!


Parmesan Cheese
This is great for sprinkling on your Pasta dishes:
1/2 c pumpkin seeds (grind in coffee grinder)
1/2 tsp salt

mix together and sprinkle like parmesan cheese!!

Chocolate Chip Cookies & Milk

This recipe is from Ani's Raw food essentials and it is so delicious!  I had milk and cookies and I feel great about it!! It was super easy to prepare and I filled up a cup of Almond milk and was in Heaven! Happy Valentines Day to me!

2 1/2 c of almond meal (I took almonds and grinded them in my coffee grinder)
1/2 tsp salt
1/2 c maple syrup
1/4 c water
1/2 c cacao nibs
1/4 c cocoa
2 pkts stevia

I mixed all the ingredients in a mason jar with a butter knife. Drop by spoonfuls into grated coconut or cacao nibs ( I use unsweetened raw nibs )  or cocoa powder and put in dehydrator for about 2-4 hours. Enjoy!! I love raw food!

Valentines Day Cacao Mint Cremes

1 c shredded coconut
1 c cashews
1/2 c macadamia nuts
2/3 c agave
1/4 c mint leaves ribs and stems removed
2 tsp peppermint extract
1 tsp vanilla
1 tsp lemon juice
pinch salt
1/2 c coconut oil, melted
1 c chocolate maple glaze (1 c maple syrup, 1 c cacao powder, 2 T coconut oil melted, 1 tsp salt, 1 tsp vanilla - blend until smoothe makes 1 cup)

To make coconut flour blend up the shredded coconut in your Vita mix until it is a fine flour....I use a coffee grinder until my Vita Mix dream comes true, blend everything till smoothe except the chocolate glaze that is for dipping the mint cookies) place mixture in fridge until it begins to harden, Roll into a log and cut medallions off, refridgerate until very firm and dip in chocolate glaze...store in fridge or freezer!

These look sooo yummy I can't wait to make them!

Chocolate Chocolate-chip ice cream sandwiches!! yes baby!

cookies:
2 c cashew flour ( I am guess you grind up some cashews?)
2 c cacao powder
1/2 cup agave/honey/or maple syrup
1/4 cup date paste (1 c dates, 1/2 c water, 1 tsp lemon juice blended in Vita mix)
1/4 c coconut oil melted
1 tsp vanilla
pinch salt

Mix together by hand into dough and roll out using parchment paper, form cookies and freeze at least an hour.
Add:
1 qt of chocolate sorbet
(Chocolate Sorbet:  1 c cashews, 1/2 c young coconut meat, 1/2 c sweetener, 1 1/2 c almond milk, 1/2 c cocoa powder, 2 T vanilla, 1/4 c coconut oil melted, pinch salt....mix together and freeze in ice cream maker)
cacao nibs

Put a scoop of sorbet inbetween 2 cookies and roll in nibs....Now that's what I am talking about!!!!
