Almond Biscotti
3 c almond flour
1/2 c chopped chunky almonds
2 T ground flax seed
2 T maple syrup or honey
2 T water
1 t cinn
1 t almond ext. ( I omitted)
1 T vanilla
1/4 c fresh squeezed oj
1 T orange zest
make into a log/loaf, cut into slices and dehydrate 6 hours.

Moe's Summer Corn Salad
3 c frozen corn
1 jalapeno seedee & chopped
3 T chopped cilantro...fresh from the garden!
salt
1 1/2 c chopped spinach
cherry tomatoes halved
3/4 c chopped cucumber
Dressing:
1/4 c lime juice
1 T honey
yogurt to make creamy...or fudge and use 1 T ranch dressing

Summer Veggie Salad with White Beans and Feta...
Spring greens mix (I use the organic from Costco....$4 for a huge box)
1 green bell pepper
1 yellow bell pepper
1 can artichoke hearts
1 c grape tomatoes
1 1/2 c white navy beans (sprouted or canned)
Dressing:
1/4 c chopped fresh basil
1/4 c ovoo
4 T red wine vinegar
1 clove garlic
1 tsp Dijon
salt
pepper
Topping:
Sun dried tomatoes
feta or goat cheese
1 green bell pepper
1 yellow bell pepper
1 can artichoke hearts
1 c grape tomatoes
1 1/2 c white navy beans (sprouted or canned)

1 zucchini
1 green bell pepper
1 red bell pepper
1 ear corn or 1/2 c frozen
2 T lime juice
pepper to taste
1/2 minced jalopeno
1/2 c pesto (1 c spinach, handful of basil, 1 garlic clove, ovoo{olive oil} in food processor)
1 1/2 c black beans (sprouted for completely raw, or canned if you choose)
2 oz feta cheese or goat cheese
1 chopped tomatoe
mix all ingredients together....put on lettuce leaf "tostada"...Enjoy!

1/3 c sliced thin strips of fresh or dried apricots
1/3 c sliced thin strips of apple
1/2 c yogurt
sprinkle or two of stevia (or 2 T maple syrup)
3 T cider vinegar
mix all ingredients and let soak 15 mins before eating.

cubed mango

1/2 c pineapple juice
2 T ovoo (olive oil)
3 t fresh grated ginger
2 t grated lemon peel
sprinkle or two of stevia
3 T vinegar
red pepper flakes
mix all ingredients to make dressing
toppings:
slivered almonds
coconut flakes
chopped red onion
cubed mango

2 T ovoo (olive oil)
